My ex-husband just bought a 68 Mustang for our daughter. Is there anyway you can have shoulder belts or airbags installed in it?

Yes, there is an aftermarket shoulder belt system available at many of the big Mustang supply stores. You might want to check here first.

you don't need air bags in a 68 stang cuz if a honda hits her the car WILL be ok

I've had my 68 coupe since I was about 16, and it only has lap belts. I would have no idea about getting air bags installed in it, and even if you could, I had to see a nice old Mustang get torn up for them. Shoulder harnessed, as started above, are easy to come by, easy to install & won't tear the car up much. If you're worried about safety though, I'd definitely recommend installing disc breaks, if it doesn't already have them. Mine doesn't, and I've had a few close calls over the years when someone in a newer car slows/stops suddenly in front of me. Its especially something to consider if she's a new driver, her reaction time and how close she follows.

I hope she appreciates having a classic!!! I know I put my heart & a lot of work into mine.
